This delicious recipe for cream cheese frosting is for you, who are not too happy about all the sweet frostings out there.
My recipe for this fluffy frosting with cream cheese actually tastes of cream cheese, with just a hint of sweetness from the small amount of powdered sugar I have added. You could almost say that this is a cream cheese frosting without powdered sugar.
I was so tired of my frostings becoming too runny, no matter what recipe i used. So today I made my own cream cheese frosting recipe for you. I ended up with this creamy and delicious frosting, that just melts in you mouth, and is not too sweet. Whats not to like.
Use this frosting as a cake filling or as a frosting on your cupcakes. You can even add som flavour, if you want to. I have not added vanilla to this frosting, because I want the “true” flavour from the cream cheese. But you can of course add vanilla if you want to. Start with 1 teaspoon, and taste it, add more if you think it needs more flavor.
An important detail when you make my frosting, is not to use the light products. It will make you frosting runny, and we dont want that. We want a firm frosting that will hold the swirls beautifully on our cupcakes.
Ingredients for cream cheese frosting
(Enough for 12 cupcakes with a medium size swirl)
125 g/ ½ cup butter
200 g/ 7/8 cup cream cheese
75 g/ 3/4 cup icing sugar/ powdered sugar
Make sure that all your ingredients are at room temperature before starting.
Method
- Whisk the butter soft and smooth
- Add the icing sugar and whisk again, we dont want icing sugar lumps in the frosting.
- Add the cream cheese and whisk until the frosting is even and smooth.
The frosting is now ready to put in a piping bag, and it is firm enough to make beautiful swirls. If you think the frosting is to soft, you can put it in the refrigerator for an hour and then whisk it again before use.
If you wonder why I whisk my butter soft first, it is to avoid those butter lumbs in my frosting. I have tried it, and even after putting the frosting in the refrigerator, I could not whisk the butter lumps away again.
You could also use this delicious frosting for a carrot cake. I think it works really well with anything sweet, because it is not to sweet itself.
